Velvet Crumb Cake aka Wheaties Cake aka One Egg Cake

Wheaties Cake also know as "One Egg Cake" is one of my dad's favorites.
 Here's what it looks like before you stick in in the broiler.

This recipe came out of Grandma's Biquick cookbook from the 1950's.  It's the same cookbook that has the hamburger onion pie.



Velvet Crumb Cake aka Wheaties Cake
1 1/3 cups Bisquick ( I made my own)
3/4 cup sugar
3 tbls soft shortening
1 egg
3/4 cup milk
1 tsp vanilla

Mix Bisquick and sugar.  Add shortening, egg, 1/4 milk.  Add remaining ingredients.  Beat about 1 1/3 minutes.  Pour into 8-9 inch greased square pan.  Bake at 350 degrees for 35-40 minutes.  Cover with broiled topping while warm.

Wheaties Topping
3 tbls butter, softened
1/3 cup brown sugar
2 tbls cream/milk
1/2 cup Wheaties or coconut

Mix together butter, brown sugar, milk and Wheaties.  Spread on baked cake.  Place about 3 inches under broiler (low heat) until mixture bubbles and browns (3-5 minutes).  Watch carefully because it will burn fast.
This recipe is good, but the cake sort of fell apart on me.  And I almost burned the topping...that was close.  O really liked this!
